Observation:
Mice droppings found in the front waitress station (cupboards and around the chest freezer), and droppings found on the dry storage room floor.
Corrective Action(s):
1) Immediately clean up the droppings and and sanitize the areas with a bleach and water solution.
2) Remove all items from the cupboards and shelves in the waitress area and clean all surfaces.
3) Move the chest freezer away from the wall in the waitress area, so the droppings are cleaned up and surfaces sanitized.
4) Look for holes and opening in the walls, cupboards in the waitress area. Block all holes and walls with metal plates, wire mesh (1/4" of smaller, or tightly stuff with steel wool.
5) Continue to have premises services monthly by a professional pest company.

Observation:
Accumulated grease and food found under the cook station and the table in the dim sum making room. This will attract and harbor pests.

Immediately clean these areas to remove the food and grease.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Low temperature dishwasher had [Cl2] of 50ppm during the rinse cycle.
- Bleach sanitizer in spray bottles had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; date coded; foods stored in groups with raw proteins below RTE foods; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas. Detailed cleaning of the whole premises is needed from floor to ceiling.
- New aluminum foil is covering surfaces and replaced daily.
- Valid, FoodSafe certified staff present.
- Monthly service by a pest company is occurring. Continue this and rodent proof the premises.
- Exhaust canopy and filters were professionally cleaned in September 2023. Next service due in March 2024.
