Observation: Observed multi stacked containers of foods (diced vegetables to be cooked), where the bottom of upper container is touching the food of lower container.
Corrective Action(s): Do not stack food containers unless there is a protection in between (e.g., a lid). Correct this: immediately.

304 - Premises not free of pests [s. 26(a)]
Observation: Observed flies throughout the main kitchen, most concentrated at the seafood prep station.
Corrective Action(s): Improve sanitation and remove standing water. Contact your pest control service to address the fly issue. Correct this by: September 29, 2022.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Observed the following which may contributed to the fly issue:
1. Number of towels on the counter that are moist.
2. Large number of organic matters in the dishwashing area from last night.
3. Back door (next to dim sum station) fully opened at this time.
4. (Repeated violation) Standing water throughout the facility (seafood tank, tea station, BBQ meat dry station, etc.)
5. Sanitation issue noted with drains, which is likely to be a pest breeding ground.
Corrective Action(s): 1. Every towels to be stored in a sanitizer (100 ppm chlorine) when not in use.
2. All the dishwashing to be completed each night. Clean and sanitize the dishwashing area every night. No organic matters to be stored over night.
3. Back door to be closed when not in use. As per the pest control service, back door's door sweep is to be replaced.
4. Remove standing water. Fix any issues that may contribute to water leaking.
5. Drains to be cleaned regularly. Contact your pest control service to acquire information on the floor drain treatment.

Observation: 1. The right side of undercounter cooler in the noodle station was measured at 8-9C. Internal temperature of foods in this cooler measured at 7-10C.
2. Water leaking from hot water dispenser (tea station).
3. Water leaking from seafood tanks' overflow pipes.
Corrective Action(s): 1. Service the cooler. Temperature must be at 4C or less. Do not store potentially hazardous foods until the temperature is verified by the district health inspector.
2 and 3. Address the issues with excessive water leaking from hot water dispenser and seafood tanks.

Routine inspection conducted:
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers measured at 4C or less (see one exception in the violation section).
All freezers' temperature satisfactory - foods kept frozen.
Hot holding soup measured >60C (no BBQ meat available at this time).
Food contact surface sanitizer measure at 100-200 ppm chlorine as per test strips.
Glass washer's sanitizing cycle measured at 12.5 ppm iodine as per the test kit.
Reviewed pest control report (dated September 7, 2022). The pest control service technician also cited similar concerns (e.g., standing water, drain, sanitation, etc.). Adhere to your pest control service's recommendations.
Dishwasher's sanitizing cycle capped at 67C. The facility converted to chemical method. Detected 100 ppm chlorine at the plate level.
