Observation (CORRECTED DURING INSPECTION): 2 issues:
-barista cooler (white mini cooler) found to be holding contents >4C (9C ambient temperature)
-baked potentially hazardous foods stored at room temperature (1/8 slice of quiche, 2X sausage rolls, 2X vegan sausage rolls) after being baked off approximately 7 hours prior
Corrective Action(s): Moved contents of barista cooler into working BOH cooler (glassdoor). Discarded baked goods.

Operator has added baked goods to the menu without prior approval. Submit an updated food safety plan and menu outlining new items and how potentially hazardous foods will be handled, displayed, and served. due: 1 week

Comments

Facility has changed operations to a coffee shop with baked goods and bubble tea. Discussed with the manager that changes to the menu and facility operations require pre-approval.

=BOH and FOH handwash stations stocked with liquid soap, paper towels, and hot/cold running water
=Walk-in freezer (-19C), display cooler (4C), barista cooler (9C), prep cooler (0C), and glassdoor cooler (4C)
=Soup hot holding (68C) measured > 60 degrees C
=High temperature dishwasher had a final rinse temperature of 78.0 C at the dish surface (minimum 71 C required for proper sanitizing)
=Bleach sanitizer solution at 100 ppm chlorine available in spray bottles
=General food storage practices satisfactory at the time of inspection, however some cleaning and organizing required in prep cooler as there are foods that are no longer being used that are stored in the unit.
=No evidence of pest activity noted at the time of inspection. =Ice machine maintained in a sanitary manner
=Staff hygiene satisfactory at the time of inspection; staff FOODSAFE certification verified to be valid (expires August 2027)
=Permit posted in a conspicuous location, however the facility name is bobacabana. Name change application to be completed.
