301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 1) 3-compartment dishwashing sink was filthy with lots of food debris left in the sink from previous night.
2) Dough mixer was not washed and sanitized after use. Dough was left sticking at the bottom and the sides inside the mixer from previous night.
3)The top of oven had food crumbs and food debris laying on it creating a thick layer.
4) Vent hood had a build-up of grease and oils.
Corrective Action(s): Ensure that the equipment/utensils/food contact surfaces are maintained in clean and sanitary condition.
1) 3-compartment sink was cleaned at the time of inspection and the food debris was discarded.
2) Dough mixer was washed during inspection. Always wash and sanitize the dough mixer with an approved sanitizer after each use.
3) Clean the vent hood on regular basis to prevent the build up of dirt. TO BE CORRECTED BY - Immediately
4) Have the vent hood cleaned and serviced on regular basis to prevent any fire hazard and risk of food contamination. Operator booked an appointment with service technician at the time of inspection.

Observation: Operating Permit was missing from the facility. Operator is unsure about where he kept it.
Corrective Action(s): Ensure that the permit is posted in a conspicuous location at all times. If the permit is misplaced or lost, request a new Permit by submitting a request to the Health Authority. An Replacement of Permit application form is sent along with the inspection report.

212 - Operator has not provided acceptable written food handling procedures [s. 23]
Observation: At the time of inspection, it was observed that the facility is offering tiffin service and selling food products that was not previously approved.
Corrective Action(s): Submit the updated Food Menu and updated Food Safety/Sanitation Plan for all the food products that are being sold at the premises.

Comments

Routine inspection conducted at food facility and the following observations were made during the inspection:

Temperature:
- All temperatures meet health requirements.
- Walk-in cooler was maintained at 3C
- Walk-in freezer at -18C
- Prep cooler at 3C (top) and 2C (bottom)
- Prep cooler (near back) at 4C
- Temperature logs were not maintained up-to date.
** Record the temperature of all refrigeration units and maintain daily logs.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
- Sanitizer spray bottle available at each workstation and the concentration of chlorine noted at 200ppm.
- Bleach is used as a sanitizer for sanitizing dishes/utensils in 3-compartment sink. Staff had the knowledge of making bleach solution at concentration 100ppm.

Storage:
- All food items were stored at least 6" off the floor.
- All products were either stored in original packaging or covered inside coolers.
- Food products were well-organized in walk-in cooler and freezer.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- Professional pest control company conducts routine checks. Last inspection conducted in June 2021.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.
**Keep the back screen door closed at all times to prevent the entry of rodents/flies into the facility.

Administrative:
- Staff has a valid FoodSafe Level 1 certificate.
**Send a copy of FoodSafe Level 1 Certificate by June 17, 2021.

COVID-19 Safety Plan:
- A copy of COVID-19 Safety Plan was available on site.
- COVID-19 protocols were in place.
- Maximum occupancy limit was posted at the entrance.
- Enhanced cleaning and disinfection protocols in place.
- A COVID-19 checklist was completed during inspection and emailed to the operator. Please review the checklist for more details.

NOTE - A follow-up inspection will be conducted on June 28, 2021 to ensure compliance.

Please remove any seats that are provided in the facility for dining-in.
