Observation: - Thorough cleaning required in the following areas:
- Food debris and heavy grease accumulation behind and under dough roller machine table. (Walls, floors, backsplash, table shelving).
- Food debris and grease accumulation on pizza crust racking.
- Grease and grime accumulation on surfaces of pizza dough proofer.
- All other surfaces and hard to reach areas.
Corrective Action(s): - Thoroughly clean the above noted areas.
- Store all items at least 6" (15 cm) off the ground to facilitate cleaning.

Observation: - Employees are cooking and consuming their own meals (unrelated to food on approved menu) in food processing areas. Equipment not related to the food premises operation are used to cook meals (rice cooker, stock pot, heat element).
Corrective Action(s): - The above noted equipment are not to be used and/ or stored in food processing areas during operation.
- Staff may consume personal meals on site; however, meal consumption must not be conducted in food processing areas.

- Handsinks and staff washroom sinks provided with hot and cold water, liquid soap and paper towels.
- Walk-In Cooler: 3 deg C
- Pizza Prep Cooler and Inserts: ≤4 deg C
- Glass Door Beverage Cooler: 4 deg C (Only beverages and non-potentially hazardous food items stored in this unit).
- Upright 2-Door Freezer: -14 deg C - Food is maintained in a frozen state.
- Pizza on Display (Room Temperature) - Staff demonstrated timer method. All pizzas are entered in computer and timers are set when pizza is set out on display. Remaining pizzas after 2 hours are discarded.
- Food storage practices appear satisfactory. Food is protected from contamination.
- Wiping cloths stored in 100-200 ppm chlorine bleach solution. 100-200 ppm chlorine bleach solution available in spray bottles to sanitizing food contact surfaces.
- Reviewed cleaning and sanitizing procedures for food contact surfaces and food equipment in continuous use. Food contact surfaces and food equipment in continuous use are sanitized at least once every 4 hours.
- Ketch All traps placed throughout premises to facilitate pest control monitoring.
