Observation (CORRECTED DURING INSPECTION):
- Inserts of mozzarella and chicken on the top of the pizza prep cooler measured 5-13C. No lids cover the inserts. Owner stated that its been set within 2 hours.
Corrective Action(s): - Move the inserts of chicken and mozzarella to walk in cooler to keep the temperature at 4 C or below.
- Make sure to cover the inserts right after each use.
- Adjust the temperature of the bottom compartment to a lower degree in order to keep the top inserts at 4 C or below. Date to be corrected by: Dec 12, 2022

Observation (CORRECTED DURING INSPECTION):
- Hand sink in washroom was blocked by unused backets, a cardboard box sitting in the hand sink.
- No paper towel supplied in the paper towel dispenser.
Corrective Action(s):
- Adequate paper towel stock required in the dispenser.
- De-clutter the washroom, ensure the hand sink accessible ALL THE TIME.

Observation:
- Cleaning date for Vent hood is Dec 20, 2022. Heavy grease built up on the vent hood and filters.
- Grease built up on the wall and the floor along the cooking line.
- Food debris built up on the shelving units, the can opener, the dough mixer.
- Unused items observed in the kitchen and in the washroom.
- Food pots placed directly on the floor under the 3-compartment sink.
Corrective Action(s):
- Completely De-clutter the kitchen and washroom.
- Thoroughly clean and sanitize the equipment, the kicthen floor, the wall, the shelving units.
- Food containers stored 15cm off floor.

- Tiles on the floor missing at the cooking area. Grease and pooling water observed on the floor. It's hard to clean if the floor is permeable and not smooth.

Routine inspection conducted with the presence of the owner.

- General sanitation needs to be improved.Please see Code.
- Handsinks equipped with liquid soap, paper towels, hot/cold running water
- Pizza prep cooler: 3-4.5 C on the bottom; 5-10 C in the inserts, please see Code.
- Walk in cooler: 2.8 deg C, all food items stored off floor
- Dessert cooler at 3.5C
No cooling process observed. All sauce made previous day after 2pm.
- All freezers at -18 C or less
- Samosas in hot holding case at 62 deg C
- 3 Compartment sink was properly set up and available for ware cleaning.
- Back door closed tight. No signs of pests activity at time of inspection

Note: (1) Remind staff to wash hands whenever hands are contaminated, for instance, after use washroom, after eat or drink, after touch garbage.
(2) Keep the kitchen tidy and clean all the time.
