Corrective Action(s): Clean up the mouse droppings and sanitize the affected areas. Mouse droppings were not found anywhere else. Premise is serviced monthly by same pest control company as the Mall's.

General observations:
Coolers were 4 degrees Celsius or less.
Freezer was below -18 degrees Celsius.
Hot holding display unit was 60 degrees Celsius.
Door seals on pizza preparation cooler have been replaced.
Food storage practices are generally good.
Storage areas are generally organized.
Hand sinks are stocked with liquid soap and paper towels.
Staff hygiene appears satisfactory.
General sanitation is satisfactory.
Bleach sanitizer (spray bottle) was 200 ppm chlorine.
Chemicals are stored in a safe manner.

Discussed with operator about the wooden serving boards found onsite. Wooden serving boards are in the shape of a cutting board but do not appear to be made of hard wood and do not appear to be impervious to moisture or easy to clean. Operator understood that all foods must be served using single-service utensils and do not use the wooden boards, because the premise lacks adequate facilities for warewashing of reusable dishware. Informed operator that even if adequate dishwashing facilities were provided, the wooden serving boards are not made of food grade wood which is smooth, impervious to moisture and easy to clean.
