Observation: Line cooler operating at room tempearature. Operator mentioned that the cooler had stopped working in the morning and he has already called the repair person.
Correction: Ensure that the potentially hazardous food inserts are surrounded with ice and placed in glass door cooler after rush hour. (corrected during inspection). Ensure that the fridge is maintaining food at or below 4C.

Observations: Operator has alternative equipment such as microwave to reheat to 74C in meantime while looking for alternative grill. (eg. commercial grade flat top or grill preferred)
Operator had purchased a grill, domestic type, available during inspection but not suitable for commercial use. Ensure meat is cooked to 74C, please check temperature using a probe thermometer
