Observation (CORRECTED DURING INSPECTION): [REPEAT VIOLATION] Two knives stored on the knife magnet observed dirty with food debris. Staff placed both knives in the dishwashing area during inspection.
Corrective Action(s): Do not store dirty equipment. All equipment must be cleaned and sanitized (as per approved sanitation plan) to remove physical and biological contamination.

Observation (CORRECTED DURING INSPECTION): [REPEAT VIOLATION] Four cans of open food observed stored in the walk-in cooler. Staff voluntarily discarded the food during inspection.
Corrective Action(s): Do not store open cans of food as this can lead to metal leaching into the food. All opened cans of food should be used immediately and any leftovers must be refrigerated in a food grade container OR discarded.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Ventilation canopy observed with heavy grease build-up. Staff stated that the ventilation canopy will be cleaned this weekend.
Corrective Action(s): Degrease and clean the ventilation canopy (as per approved sanitation plan) and submit photos to the health inspector via email.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION):
1. Bleach sanitizer bottle in kitchen observed broken and not able to spray sanitizer. Staff obtained new sanitizer bottle during inspection.

2. Food processor container observed glued in multiple areas. Staff voluntarily discarded the food processor container during inspection.
Corrective Action(s): Do not store or use broken equipment which is not in good working order. Equipment which is repaired with glue, tape or other means is no longer food grade as it cannot be sanitized adequately between uses and can potentially physically contaminate food. All broken equipment must be replaced immediately.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: No staff member on site has FOODSAFE Level 1 training or equivalent during inspection. Operator is not available on site.
Corrective Action(s): One staff member must apply for FOODSAFE Level 1 training or equivalent and complete training within 2 weeks. Submit proof of application AND proof of training to the health inspector via email.

- All freezers at or below 19'C
- Sandwich preparation coolers (X2) at or below 4'C
- Display cooler at front at 3'C
- Hot-holding units at buffet station at or above 60'C
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher measured at 74'C at plate surface (above minimum required final rinse temperature of 71'C)
- 2-compartment sink available with drain plugs and bleach
- Bleach sanitizer in spray bottles (X2) measured at 200 ppm chlorine concentration with test strip
- Dry stored foods observed stored in pest proof containers
- All food stored covered and at least 6 inches off the floor
- No signs of pest activity during inspection
- Permit posted in a conspicuous location on site
- Staff observed wearing hair nets
- Public washrooms observed in sanitary condition with hand washing stations adequately supplied with hot and cold running water, liquid soap and paper towel

**Reminders:
- Ensure staff close the walk-in cooler door behind them each time they go inside to prevent cold air from being released (and hot air from entering) the walk-in cooler.
