Comments

Monitor frost or ice build-up around the perimeter of walk-in freezer including along inside wall of walk-in cooler. Frost build-up results in pooling melted water most noted in cooler. This will require scheduling additional clean up and maintenance to this environment to ensure proper sanitation is maintained and slip risk minimized.

Temperature controls good. Hot holding above 60 C; cooling units all below 4 C. Good use of ice to supplement temperature controls.
Dishwasher at 25 to 50 ppm Chlorine at 62 C final rinse water temperature. **OK as per Food Code.
Sanitizing buckets just refreshed and quats reading at or above 200 ppm. OK.
Handwashing stations well stocked.

Notable improvement in all areas of kitchen and bar observed. Attention to detailed cleaning quality and/or frequency has clearly improved the overall standard of this facility. Third party auditor introduced to this franchise has likely facilitated this improvement. Very Good!
