Observation: Black buildup noted on the wall below the main dishwasher.
Corrective Action(s): Complete a deep cleaning and sanitation of this area and remind staff to include this area as part of the Sanitation Plan to maintain the cleanliness after a deep cleaning is completed.

Observation: Noted some plexi containers/ inserts holding cold potentially hazardous food were severely chipped or cracked.
Corrective Action(s): Operator discarded some of these severely chipped/ cracked inserts. Go through all the inserts you have at the facility and discard any that are really worn out that could potentially have plastics coming off and becoming a physical hazard to food.

Routine inspection conducted today:
Handwash stations, including washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were holding food at 4C or less.
All freezer units were holding food at -18C or less.
Proper storage hierarchy observed and food was stored protected.
Observed thawing done in an approved method - in the walk-in cooler.
Bleach sanitizer containers were set-up in the front and back preparation areas. Both noted with 200 ppm chlorine residual.
High temperature main dish machine in the back of house was noted at 185.0F at the rinse temperature gauge and 78.8C at the plate level during the rinse cycle.
Bar high temperature dish machine was able to reach at least 71.0C at the plate level during the rinse cycle.
All food contact items were noted in a sanitary condition.
No signs of pest activities noted during the inspection.
Overall improvement noted on the general cleanliness of the facility.
Operator was onsite at the time of inspection. Operator has a valid FOODSAFE level 1 certificate available - reminder to renew the certificate before it expires (July 24, 2023).
