Corrective Action(s): Fresh garlic in oil is to be stored in the fridge or may be kept at room temperature if time temperature monitoring and recording is to occur as discussed. Operator to store fresh garlic in oil in the cooler between uses.

Observation (CORRECTED DURING INSPECTION): Operator did not have a bottle of sanitizer available for sanitizing food contact surfaces.
Corrective Action(s): Operator mixed a solution of bleach water and filled a labelled bottle with a 100 PPM chlorine residual to be used on all food contact surfaces such as cutting boards.Operator using lysol on tables.
