Premises has been cleaned and re-painted recently.
Kitchen is well-organized. Operator will be removing some unneeded equipment.
Potatoes - keep at least 6 inches up off of the ground - operator is designing shelves.
Three coolers - all at <4 C - good. Freezer - good.
Fish - cod from approved source.
Produce is either pre-washed or washed on site.
No raw eggs. Keep food safety plans on-site.
Hand washing sink has hot/cold water, liquid soap, and paper towels in dispenser.
Double sink and dishwasher. Dishwasher has a final sanitizing rinse of >180 F shown on the gauge and >160 F measured inside of the machine- good.
Wiping cloths are stored in a chlorine sanitizing solution of 200ppm. Good. Use 1 tsp domestic bleach in 1 litre of water. Poster given.
Food Safe - see above.
Washroom sink - is broken and operator advises it has been repaired (tape to be removed). Surfaces are to be smooth and easy to clean.
