Observation: Hot holding chicken (auto sham - kitchen) = 38.6 C.
Correction: Hot holding must be maintained at or above 60 C. Temperature of holding unit does not appear to be accurate.

Reinspection based on previous Inspection Report.
- Temperature Control: Hot holding cabinet >60 C. Good.
- Food Storage: Thawing procedures still not adequate. Frozen items being stored in sinks full of water.
- Sanitation: Cleaning of "hard to reach" areas - below/under equipment, along walls still requires attention. Establish a routine cleaning schedule of all these areas.
Food Safety policies and procedures are required to be reviewed by all staff!
