Observation: Walk in cooler is 9 degrees C.
Corrective Action(s): Repair or adjust so that foods are maintained at 4 degrees C. All foods are to be maintained at 4 degrees C. Bags of shredded cheese, guacamole, cut produce and any other potentially hazardous products are to be moved to other coolers or discarded if they have been maintained at above 4 degrees C for more than 4 hours.. Thawing meat must be moved to other cooler before it reaches danger zone temperature.

Reopening after minor renovation carried out.
General sanitation is overall good.
Floor drain has a cover.
Hot holding units are maintaining foods at 60 degrees Celsius or hotter.
Food in prep cooler are all 4 degrees C. or colder.
Walk in freezer is -18 degrees C. or colder.
Liquid soap and paper towel at sinks.
Sanitizer measured 200 PPM quat residual.
Walk in cooler is currently maintaining foods at 9 deg. C. Operator believed temperature is high from prepping all food for reopening. Walk in cooler temperature was observed with no changes to temperature. All potentially hazardous food were moved to other coolers until service technician can look at fridge later today. . Operator logs show temperature of fridge was 4 degrees this morning.
