- handwashing stations dispensers now have working towel dispensers
- sanitizer available - measured 200ppm chlorine
- buckets that formerly held cleaning chemicals no longer present
- water no longer pooling in bottom portion of prep cooler
- cleaning has improved - no dried dough on dough hook

Buffet Temperatures:
- hot holding units (3): 60C or higher
- cold held items: 4C - restaurant fills tray with ice to freeze, then puts items on top; recommend topping up the ice with water so the inserts are submerged
