Observation: 1) There are no shelving above the 3-compartment sink for air drying dishes. Wet dishes are placed on the table next to the sink and water was observed pooling on the floor under and around the table.

2) The light in the walk-in cooler is too dim. You can't see items on the opposite end of the cooler.
Corrective Action(s): 1) Install shelving with holes/slates above the 3-compartment sink for airdrying dishes.

2) Provide brighter lighting in the walk-in cooler.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: There were 2 employees working at the time of the inspection and neither had Foodsafe Level 1 certification.
Corrective Action(s): There has to be at least one employee working that has FS Level 1 certification.

General Observations:
Coolers are below 4 degC
Freezer's at -18 degC
Handsinks are fully equipped. REFILL SOAP DISPENSER AT THE BACK HAND SINK.
200ppm quats is available for sanitizing
Temperature log's being maintained
Three compartment method of dishwashing is being utilized
General sanitation is good.

A follow-up inspection will be conducted on January 6, 2023
