Sewage back up corrected and premises disinfected. Great job!! cooling temps good - less than 4 C. Freezer temps good. less than - 18 C. Dishwasher at 72 C at plate - ok. Cutting boards sanitizing in chlorine at 200 ppm - very good. Watch the spray bottle and ensure it is always filled with 100 ppm bleach solution. (1/4 tsp bleach to 750 ml water). looks good. OK to re-open.
