-Follow-up inspection to August 23, 2023.
-Quats sanitizer dispenser has been serviced and was dispensing at 200ppm.
-Chemical dishwasher had a final rinse of 100ppm chlorine on the dish surface during the final rinse (minimum of 50ppm required for sanitizing). Staff will begin testing the chlorine concentration daily to verify at least 50ppm chlorine is present.
-No foods stored in the hot holding cabinet at the time of inspection. Operator to test the hot holding unit to verify foods can be maintained at/or above 60C on a consistent basis. Operator has probe thermometers to verify the internal temperature of the food items. Currently only soondae is permitted to be stored below 60C if time tracking records are maintained (foods must be sold or discarded within 2 hours). Unapproved food items stored below 60C will be discarded and a violation ticket may be issued.
-Walk-in cooler was adjusted and foods were at 2C.
