Operator reminded that cleaning and maintenance to be done regularly and thoroughly. Corrective Action(s): * Complete all cleaning of kitchen including under tables, food equipment and baseboards and maintain Violation Score: 9 311 - Premises not maintained as per approved plans [s. 6(1)(b)] Observation: * Grouting has deteriorated in dish washing area and grill areas. * Organization improvements noted * Some cleaning improvements noted; cook mentioned they are working on cleaning in grill/cooking areas and are continuing to do deep cleaning BEHIND/UNDER all of this equipment * Note: some cleaning to be done along baseboards and under prep tables, etc., and ice machine (top/underneath) to remove build up of grime/debris * Soap dispenser at one end of cook line broken and operator to repair; in interim a temporary soap dispenser was in place * Follow up inspection to be done in February
