Observation: Small metal cups observed to be used as scoops in mixing room. Potential contamination of ingredients from staff as gloved hands can come into contact with spices.
Corrective Action(s): Operator stated faciltiy is undergoing SQF revisions. New coloured plastic scoops with handles have been purchased and available, but are currently waiting for procedures to be developed to implement properly.
Please implement as soon as possible.

Observation: Build up of grease under, behind, around, and between cooking range equipment.
Corrective Action(s): Operator has stated these areas are cleaned weekly. As grease is a potential attractant/food source for pests, it is recomended to have area cleaned more frequently.
