Two door prep cooler is now operating at 4 deg C or less (foods inside were probed to be between 2-3 deg C)
Cleaning has improved in dry storage area and under some parts of the cooking line (ensure to thoroughly clean underneath all areas of equipment AND between where food/grease buildup is accumulating )
All food items covered
Discussed cracks/craters in flooring by the ice machine area with head chef. He has indicated that they will be patched/filled in within the next week. Ensure that the material used to fill the holes is smooth, easy to clean, and impervious to water. When the floor is mopped, the material should stay in place.
