Observation (CORRECTED DURING INSPECTION): Wiping cloths stored in container of sanitizing solution which was measured at approximately 50 ppm quats. This is a repeat violation.
Corrective Action(s): Solution was changed during inspection and re-tested at 200 ppm. Ensure that quats sanitizer is maintained at a concentration required for effective sanitizing of food contact surfaces (e.g. 200 ppm quats). Change as often as needed to maintain this concentration. Ensure test strips are within expiry.

Follow up to Rpt # MBEK-B65UA6.

A new hot holding unit has been obtained, as stated by staff. Both hot holding units on site were in use at time of inspection. Internal temperatures of hot held food items were measured at 60 degrees C or more.
Quaternary ammonium compounds (quats) sanitizer available in sanitizing compartment of three-compartment sink and from dispenser at 200 ppm quats.
