Observation (CORRECTED DURING INSPECTION): (1) Container of raw bean sprouts found stored out at room temperature, no guests were in restaurant at time of observation, internal temperature measured 19C. *This is a repeat infraction*
(2) Line cooler in kitchen used to hold contents of pho measured at 6.2C underneath and 8C on top. Coolers must keep food at or below 4C.
Corrective Action(s): (1) Only enough sprouts that can be used up within two hours can be stored out at room temperature. During quiet times, sprouts should be stored in the cooler. Sprouts moved to cooler during inspection.
(2) Unit adjusted during inspection.

Observation (CORRECTED DURING INSPECTION): No prepared sanitizer available during inspection.
Corrective Action(s): A prepared sanitizer must be available at all times in a bucket or spray bottle. Sanitizer solution made during inspection. Reminder: 1 teaspoon bleach for 1 litre of water.

Observation (CORRECTED DURING INSPECTION): Main handwash station in the back had the hot water turned off.
Corrective Action(s): Keep this on so staff can wash their hands using warm water.

Observation: Main walk in freezer temperature was approx -6C. This unit must maintain -18C or less.
Corrective Action(s): Adjust/repair unit so it can maintain -18C or less. Due within one week.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: (1) Observed several buckets used to store frozen broth were labelled as "Rona" and one orange one as "Home Depot". These buckets are not intended for use for food and are not food grade. Only food grade containers may be used. Food containers previously used for food (ex oil, soya sauce, etc) maybe reused for food.
(2) Garbage bag used to store spices (ex star anise) and bag was in direct contact with food. These are not intended to be used to store food that is to be eaten.
Corrective Action(s): (1) As product is thawed and used out of these "rona" and "home depot" buckets, do not reuse these buckets for food and replace them with food grade containers. Due: One month from today.
(2)Transfer all food to food grade containers. Due by tomorrow.
