Coolers (including the small prep cooler by hand sink) are all keeping food at 4 C or colder.
Keep daily temperature records for fridges and dishwasher.
No hot holding today.
Hand washing sinks (front, back area, and staff washroom) have liquid soap and paper towels in dispensers.
Keep food safety plan on site. Reviewed corrective actions.
Operator has updated Food Safe Level 1.
Dishwasher has a hot water sanitizing rinse (>71 C measured inside of the machine and >82 C shown on the gauge) - good.
Chlorine sanitizing rinse is used to sanitize food contact surfaces and wiping cloths - good (200 ppm chlorine measured).
Ice cream scoops - are cleaned after each use. Use dipper well (with cold, running water) if busy.
