Walls painted;
Old shelf removed; replaced with new shelf - paint new shelf.
new shelf over grease trap added. Area generally cleaned up.
Freezer resurfaced with vinyl - silicone the edging to prevent water intrusion while cleaning.
Floor in cooler re-done. Vinyl. Seal the edge or floor wall interface to prevent moisture intrusion. Regular cleaning will dictate shelf-life.
Fridge at 4 C. Very little food kept in this unit. Magnetic seals still not properly fixed/replaced. Monitor. Avoid keeping PHF's in this unit.
Sushi bar at 4 C. Operator now rotates units on/off cycle to every second day. OK. Monitor temps in this unit.
