Observation (CORRECTED DURING INSPECTION): Tofu measured at internal temperature of 7.9C in the cooler beside the deep fryer. Food items stored in the cooler for roughly 30 minutes.
Corrective action: Transfer food items into another working cooler that is capable of maintaining temperature of 4C or lower.
Rationale: Potentially hazardous food, such as tofu, are capable of supporting the growth of bacteria which can make customers sick when the contaminated food is consumed.

Observation: 1. spilled oil observed on the floor under the deep fryer.
2. Accumulated food debris observed under the counter beside the equipment washing sink that is across from the freezer.
Corrective action: Clean and sanitize the above areas.
Rationale: Maintaining the premises in a sanitary condition will prevent attraction of pests and contamination to food.

Rationale: Cooler must be in working order to ensure that potentially hazardous foods are maintained at 4C or lower to prevent foodborne illness.

- All coolers (except the one beside the deep fryer, see code 308) maintained at a satisfactory temperature.
-Freezer measured at -25C
-Rice hot-held at 65C
-Sushi rice measured with pH of 4.0
-Rice scoop stored in cold water
-Ice machine maintained in sanitary condition with the scoop not directly contacting the ice.
-High temperature dishwasher sanitizing at 73C at utensil surface.
-Two compartment sink with sink plugs available for manual warewashing.
-Handsinks all equipped with liquid soap, hot/cold running water and paper towel.
-No pest activity detected on-site.
-One staff onsite with valid and current FOODSAFE (expired May 12, 2023)
