Food not cooked or reheated in a manner that makes it safe to eat [s. 14(1)]
Observation: Fennel sausages purchased raw then baked in oven prior to slicing and freezing for future use.
Correction: Fennel sausages when cooked in oven must reach an internal temperature of 74 C or hotter to be considered fully cooked.

Staff to check cooking temperature of sausage using a probe thermometer.

Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation: Software system for time monitoring of ambient temperature displayed pizza is currently unavailable due to system updates.
Correction: All pizzas displayed at room temperature must be monitored for a maximum of 2 hour shelf life before unsold product is to be discarded.

Until software system is functional, all pizzas are to manually monitored for shelf life by staff.

Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Front service area handsink - papertowel dispenser has broken off the wall.
Correction: Re-install papertowel dispenser by handsink to allow staff to conduct conventient and correct handwashing method.

Comments

Timer system software has been re-installed and in use to time track 2 hour shelf life of pizza slices displayed at room temperature.

Operator has obtained a source of ready to eat fennel sausage that does not need to be pre-cooked onsite prior to use as a pizza topping.

Front handwashing station has a new wall mounted papertowel dispenser installed.
