Observation (CORRECTED DURING INSPECTION): Several wiping cloths were left out on countertops.
Corrective Action(s): Moved to bleach sanitizer buckets during inspection. Ensure all used cloths are rinsed and stored in sanitizer solution between uses - this will prevent microbial growth in the cloths, and possible cross-contamination of food contact surfaces.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Dishes in clean storage rack were placed directly on a sheet of cardboard.
Corrective Action(s): Re-wash all dishes in this container, and remove the cardboard by the end of today (17th July 2017). Cardboard is not suitable as a shelf liner for clean dishes, as it cannot be adequately cleaned and sanitized.

310 - Single use containers & utensils are used more than once [s. 20]
Observation (CORRECTED DURING INSPECTION): 2-3 empty prawn containers were observed in clean storage on top of the dishwasher. Plastic had deteriorated, and containers were in poor condition. Staff state these are reused for tobiko storage.
Corrective Action(s): Discarded. Ensure only food containers designed for multiple uses are cleaned and reused for food storage.

Observation: Several coolers and freezers lacked thermometers.
Corrective Action(s): Install accurate thermometers in each unit within two days (19th July 2017).

Comments

*General sanitation satisfactory. No evidence of pest issues observed during inspection.
*Note: some cleaning is required on shelving under grills, and behind/under fryers. Ensure all tinfoil liner in this area is changed within one week (24th July 2017).
*Cooler and freezer temperatures satisfactory.
*Temperature records kept up to date.
*High-temperature dishwasher reached a sanitizing rinse temperature of 71 C at the plate level.
*Note: operators are using chlorine sanitizer in addition to the high-temperature rinse.
*Hand sinks equipped with warm water, liquid soap and paper towels. Note: ensure hot water flow rate is increased at sushi area hand sink by tomorrow (18th July 2017).
*Washrooms maintained in clean condition.
*Hot holding temperatures satisfactory.
*Probe thermometer available on site. Ensure this is used to check internal cooking temperature for batches of cooked meat.
*Bleach sanitizer available at 200ppm in spray bottle.
*Discussed glove use with staff during inspection. New gloves were in use at time of inspection. Ensure gloves are changed and hands are washed after any activity that contaminates the gloves.
