Observation (CORRECTED DURING INSPECTION): Chopped vegetables, oranges, cream based sauces, and dipping sauces were at 15C in the line cooler.
Corrective Action(s): All the items were discarded at the time of the inspection. The line cooler was emptied. Do not store potentially hazardous foods between 4C-60C for more than 2 hours.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): "Cleaned" meat slicer had meat debris around the blades.
Corrective Action(s): Staff dismantled the blade at the time of inspection and removed it for washing and sanitation. Ensure all the parts are dismantled after use (or every 2 hours for continued use) and thoroughly washed and sanitized to prevent the growth of pathogens and toxins that can cause foodborne illness.

Observation (CORRECTED DURING INSPECTION): Raw eggs stored above ready to eat food items.
Corrective Action(s): Eggs were moved to the bottom most shelf. Ensure raw eggs and raw meats are stored on the bottom to prevent cross-contamination through accidental spills.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): A bag of frozen gravy was left at room temperature for thawing. The product was still frozen.
Corrective Action(s): Staff poured the gravy in a pot for boiling at the time of inspection. Do not thaw food items at room temperature as the surface of the product thaws and warms up faster than the inside - allowing pathogens and toxins to grow that can cause foodborne illness.

Observation: The line cooler was malfunctioning and had an ambient temperature of 15C. The food items inside the cooler were held at 10-16C internal temperature.
Corrective Action(s): Do not use the line cooler until it is repaired and the inspector verifies that it can maintain 4C or below. Have the cooler repaired. Date to be corrected by: March 28, 2023

Inspection conducted with an EHO student.
Facility is in good sanitary condition.

Temperatures:
Walk-in cooler was maintaining 4C.
Walk-freezer was maintaining -30C.
Reach in freezer was maintaining -24C.

First in fist out principle is strictly followed. All food items are labelled.
The hot holding units were not in use at the time of inspection.

Temperature logs are up to date.

Sanitation:
All hand sinks were stocked with hot and cold running water, liquid soap, and paper towels.
Staff hygiene and food handling practices appeared satisfactory.
Ventilation hoods were in good sanitary condition. They are due for cleaning in May 2023.
3-compartment sink was equipped with plugs. 3rd sink contained 200 ppm QUATS.
Sanitizer dispenser dispensed 200 ppm QUATS.
Sanitizer buckets were available in all food handling areas in use.
Low temperature dishwasher had 100 ppm chlorine residual after the final rinse cycle.
Ice machine was in good sanitary condition. Scoop was stored on a stand in a sanitary manner.
Floors and hard to reach areas were in good sanitary condition.

General:
Chemicals were stored in a safe manner under sinks and away from food items.
Washrooms were in satisfactory sanitary condition.
Dry storage area is in good sanitary condition. No food is stored on the floor.
Garbage disposal area at the back is kept neatly. No fly activity noted.
All lights were functional.
Saff had valid Food Safe level 1 certifications or equivalent available on site.

Pest Control:
No visible signs of pest activity noted at the time of inspection.
Facility is monitored by a professional pest control company. Tin cats were empty.
