Observation: Grease build up on the floor beside the grill area. Manager said that this area is cleaned once a week (every Wednesday).
Corrective Action(s): Ensure grill area floor is thoroughly cleaned to remove debris build up.

Hand wash stations provided with liquid soap and paper towels.
Sanitizer (quats) at 3 comp sink measured >200 ppm.
Walk-in freezer was at -18 deg C.
Walk-in cooler registered at or below 4 deg C.
Prep line coolers were at or below 4 deg C.
Ice cream freezer was at -8 to -10 deg C.
Dipper well in good working order.
Hot holding for gravy was above 60 deg C.
Temperature log was well-maintained.
Pest control monitoring in place. No pests noted at time of visit.
Food and food-related items were stored off the floor.
General sanitation was satisfactory at time of visit.
Items to address:
1. Keep all dirty dishes on one side of the sink. Follow one way direction for ware washing.
This location uses right to left direction and use drain board for air drying clean dishes. Do not cross-contaminate.
In the future, provide a stainless steel table or cart for storing dirty dishes.
2. Garbage disposal area requires sweeping and power washing soon.
3. Ensure all shifts are covered by having at least one staff on duty with valid Food Safe 1 certification.
Keep copies of Food Safe 1 certificates on file and available for review by EHO.
All Food Safe 1 taken prior to July 29, 2013 expired July 29, 2018.
