Observation: Cleaning is required in the following hard to reach areas:
- Spills, debris noted under glasswasher in bar
- Food residue/splatter present on under side of shelf over chest freezer
- Minor amount of grime present in grout of floor between chest freezers in kitchen

Observation: - Shelves in bar cooler (where milk is stored) are very rusted.
Corrective Action(s): - Remove rusted shelves and replace with shelves which are in good repair and have a surface which can be clean and sanitized. To be corrected by: 04-Dec-2023
Note: Rusted shelves were removed at time of inspection.

Comments

- Overall sanitation was satisfactory aside from noted hard to reach areas in violation above.
- Handsinks (bar and kitchen) were supplied with liquid soap and paper towel
- Coolers were operating at 4C or colder and equipped with thermometers
- Freezers were maintaining food products frozen
- Hot held foods (gravy, au jus, cheese sauce) were held above 60C. Staff confirmed products are first heated on the stove prior to being hot held.
- Food was stored in a manner to prevent contamination.
- Raw meat was stored beneath (or away from) produce and ready to eat items
- Foods were tightly covered/wrapped
- Food products were stored off of the floor
- Clean dishes/utensils were stored in a sanitary manner
- In use wiping cloths kept in quats sanitizer solution (200ppm).
- Quats sanitizer (200ppm) present in labelled spray bottles in bar and kitchen
- Bar glasswasher was operational. 12.5ppm iodine detected in rinse cycle. Iodine test strips present.
- Kitchen dishwasher operational. 100ppm chlorine detected on dish after cycle. Chlorine test strips present
- No evidence of rodents or cockroaches (droppings, sightings) were observed at time of inspection. Pest control service in place with regular service (every two weeks). Most recent pest control service report (24-Nov-2023) viewed at time of inspection indicating minimal rodent (mouse) activity and no cockroaches observed and no sanitation concerns. Continue to maintain a high level of sanitation and follow any recommendations of Pest Control Technician.
