Walk-in cooler temperature is 2 degC; prep cooler temperature is 3 degC; drink cooler temperature is 3 degC
There are no freezers on-site; foods are not hotheld (prepared to order)
Front handsink and washroom sink are fully equipped
200ppm Quats is available in a spray bottle
Discussed sauce expiry dates and shelf stability. No concerns noted.
Three compartment method of dishwashing is being utilized; in-use utensils are washed/replaced every 1- 2 hours.
Manager onsite has FS Level 1 equivalency
Temperature logs are being maintained
Orkin is on a monthly contract. Reviewed last service report. No concerns noted.
General sanitation is excellent.
