Observation (CORRECTED DURING INSPECTION): - No sanitizer detected from spray bottle in kitchen and bar.
- Mold build up noted on the plate over ice in the ice machine ( top part)
Corrective Action(s): -Ensure to re-fill spray bottle with fresh sanitizer and test with test strip to ensure proper concentration.
-Clean and sanitize the ice machine plate

Observation: Accumulation of dirt and food debris noted under shelving units in both walk in cooler and freezers, also under shelving in dry storage area, under equipment in kitchen-hard to reach area.
Corrective Action(s): Deep clean the noted areas.

Observation: Small dishwasher ( high temp) in dishwashing area did not reach proper temp after 4 runs,
Corrective Action(s): -Repair it to reach proper temp.
-Either do not use it or dishware must be manually sanitized by soaking in a sanitizer for 2 minutes (ie: bleach 1 oz in 1 gallon = 100 ppm) for 2 minutes.

Observation: Noted several spray bottles with chemical without label.

Comments

Routine inspection conducted with student leading.
- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels
- Refrigeration temperatures are ≤4o Celsius
-Accurate thermometers are provided in coolers
- Freezer temperatures are satisfactory
-Foods are properly stored , covered and labeled
-Hot holding temp >60 oC
-Dry storage room is organized no issues noted.
- Quaternary-ammonium food-contact surface sanitizer solution (Oasis 146) available at adequate (200-400ppm) at source- bottle was low manager changed it at time of visit.
- Glass washer iodine measured at 25 ppm, chemical test strip was available.

***High-temp dishwasher (main) achieved final rinse temperature of > 71 oC at plate, after 4 runs - fix it so it doesnot take 4 run to get to high temp
*** Provide either max holding thermometer or thermo label to monitor temp of both dishwasher.
*** Small amount of some dropping appears to be mice noted in the corner beside walk in freezer and under shelving in dry storage room, put sticky traps and monitor
*** Discussed wiping rags in the kitchen (noted several on stored on counters at time of visit) : either store them in a bucket of sanitizer between uses or switch to paper towel with spray bottle sanitizer
