Observation (CORRECTED DURING INSPECTION): Red, Yellow and Green curry sauces out at room temperature (temperatures of 31-34 degrees Celsius observed). Items stored on top of stove but either not on burners or burners had been turned off.
Peanut sauce at temperature of 45 degrees Celsius in water bath.

Large amounts of grease and food debris have accumulated in the following areas:
- Shelves throughout.
- Floors under equipment, tables, prep areas,
- Entire grill and cooking areas including floor, exhaust canopy, wall, pipes, shelves underneath, between equipment
- Microwave
- Cooler fronts and inside
- Remove black mould inside walk in cooler.
- Anywhere else food debris, splatter or grease has accumulated

Corrective Action(s): Clean and sanitize all above mentioned areas. Use a flashlight.

- Sanitizer solution in use throughout kitchen food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Ice machine and scoop in good sanitary condition
