Comments

* Raw chicken for chicken shawarama cones is stored in designated blue colored buckets.
Ensure to wash hands thoroughly and clean/sanitize the sinks after washing the blue buckets.
* Sanitizer concentration in the double sink was 100 ppm. Increase the sanitizer strength to 200 ppm.
* Ensure to keep all coolers inserts covered outside rush hours.
* Ensure a spray bottles of sanitizer (200 ppm quats) is available to sanitize food contact surfaces in the front prep area.

Sliding door cooler below 4 C.
Sliding door cooler (veggies) : 4 degrees C.
Preparation cooler across from the grill: 4.3 degrees C.
Hot holding of rice> 60 C.
Hot holding of lamb, chicken and beef shawarma meat > 60 C.
Shaved off meats and chicken are cooked on a flat top grill before placing in the steam tables.
Liquid soap and paper towels available at the hand sinks.
General sanitation is satisfactory.
