Observation (CORRECTED DURING INSPECTION): 2 handwashing sinks in premises not equipped with liquid soap at the time of inspection. Operator to ensure handwashing sinks are equipped with hot and cold running water, liquid soap, and single-use paper towels during the operation of the premises to encourage proper and frequent handwashing.

Observation (CORRECTED DURING INSPECTION): Cooked potatoes, cauliflower, and cooked rice buckets noted in walk-in cooler uncovered. Cooked chicken in standing freezer uncovered at the time of arrival of Environmental Health Officer. Foods in coolers and freezers are to be covered to protect items from contamination after proper cooling. Repeat Violation.

Observation: Moderate fruit fly activity observed near dry storage area for potatoes. 6 bags of raw potatoes noted to be rotten and unfit for human consumption. Noted bags were discarded at the time of inspection.
Corrective Action(s): Operator to ensure dry storage area is cleaned and sanitized with a dilute bleach solution at 100ppm. Storage of root vegetables must be accessible and sanitary. Older stock is to be used first, followed by newer stock. Foods are to be stored at least 15 cm off the floors to encourage frequent cleaning.

Observation: Grease and debris noted on floors throughout kitchen area and in walk-in cooler. Build-up and food debris noted underneath equipment, shelving, and in hard-to-reach areas. Dust build-up noted on ceiling panels and forced air vents above cook line.
Corrective Action(s): Operator to ensure noted areas are cleaned and sanitized with a dilute bleach solution at 100ppm. A mild chlorine solution can be made using 1/2 teaspoon of 5.25% unscented bleach to 1 liter of water. Premises must be maintained in a sanitary condition to prevent the attraction of pests.
