- A few buckets of sauces and paneer in walk-in cooler were uncovered.
Corrective Action(s): Do no store any food directly on the floor. All food items must be stored properly covered.

Observation: - Food debris on floor in hard to reach areas in storage room with dough mixer.
- Small amount of food debris also present on floor under and behind cook line.
Corrective Action(s): Clean floors in storage rooms, in hard to reach areas, and under all cooking equipment at least once a week.

Comments

- Hand washing sink in kitchen was supplied with hot and cold running water, liquid soap, and paper towels.
- High-temperature dishwasher reached 74C at dish surface during rinse cycle
- Quats sanitizer solution available at 200 ppm in spray bottle. Bleach also available for sanitizing.
- Prep coolers, display cooler for sweets, and walk-in cooler were measured to be at 4C or colder
- Chest freezers were measured to be at -18C or colder
- Food storage in coolers was organized.
- Upstairs storage area requires some reorganization.
- Fruit fly issue has been resolved. No signs of pest activity noted at time of inspection.
- Hole in dry storage room with dough machine has been sealed
- General sanitation has improved - please maintain/continue with cleaning efforts.

*Reminder: Ventilation canopy baffles and floors under and around stoves must be cleaned and sanitized once a week.
