All coolers were measured at <4C All freezers <-18C Hot holding of soups and gravy at >60C Ice machine maintained in a sanitary condition Sauces and dressing kept on ice. Exhaust canopy maintained in a sanitary condition High temperature dishwasher measured 72C at the plate after a few runs. Monitor temperature. Temperature logs were being kept Front bar glass washer measured 50 ppm chorine. Bleach spray bottle at 100-200 ppm chlorine.
