Cooling procedures for cooked foods acceptable. Make sure room temperature cooling does not exceed 2 hrs and the foods are able to get to room temperature within that time.

Sanitizing good - dishwasher at 50 ppm chlorine and multiple spray bottles with 200 ppm quats available for use.
