Observation (CORRECTED DURING INSPECTION): Three door prep cooler - air temperature is again at >4 C. Food temperature is also at >4 C (5-6 C) with the exception of food to the far right of cooler (fish) that was about 8 C and was discarded during inspection.
The large 3 door reach in cooler air and food temperature varies. The food temperature also varies from 6 - 8 C.
Corrective Action(s): Potentially hazardous foods (fish, meat, chicken, cheese, cooked rice, cooked potatoes, cooked vegetables) must be stored so that the food temperature is less than 4 C (40 F). Fish from the large prep cooler and potentially hazardous foods in the large 3 door reach in cooler were discarded during inspection. Potentially hazardous foods to be stored in 2 door prep cooler (air temperature <4 C). Do not use any cooler to store potentially hazardous foods unless it can keep them at 4 C or colder. Three door large prep cooler - thermostat was adjusted during inspection and the air temperature is now <4 C. Monitor and record air temperatures at least twice daily and follow your food safety plan.

Corrective Action(s): Repair large 3 door reach in cooler so that it can keep potentially hazardous foods (meat, fish, poultry, cooked vegetables, gravies, etc.) at 4 C or colder. Repair seals on doors. Monitor this cooler twice daily and record temperatures.
