Observation (CORRECTED DURING INSPECTION): Vegetable slicers have dried food debris. Pens stored inside container with utensils.
Corrective action: Vegetable slicers and utensils washed and sanitized with 200ppm Quaternary ammonia sanitizer at time of inspection. All equipment and utensils must be adequately sanitized and stored in sanitary condition to prevent microbial growth and/or toxin production in order prevent food contamination. Do not store pens with utensils (food-contact surfaces) as it may potentially contaminate the utensils, which may then contaminate food.

Observation (CORRECTED DURING INSPECTION): Sanitizer not available in front area and back area.
Corrective action: Staff prepared fresh sanitizer at time of inspection which measured at 200ppm Quaternary ammonia compound. Staff sanitized all food-contact surfaces at time of inspection. Adequate sanitizer is necessary to properly sanitize food-contact surfaces in order to prevent microbial growth and/or toxin production. Fresh sanitizer should be prepared every 2 hr and use test strips to confirm concentration.

Observation (CORRECTED DURING INSPECTION): Mens washroom not supplied with liquid soap.
Corrective action: Supply liquid soap in mens washroom to allow for adequate handwashing for employees. Adequate handwashing station is essential to allow employees to maintain hygiene and to prevent potential food contamination. Operator supplied washroom with liquid soap at time of inspection.

Observation (CORRECTED DURING INSPECTION): Bag of onion stored on floor inside dry storage area.
Corrective action: Staff stored bag of onion on top of crate, 6 inches off the floor. All food must be stored at least 6 inches off the floor to prevent potential food contamination and to facilitate cleaning.

-Prep cooler, undercounter cool, 3-drink display cooler and walk-in cooler all measured below 4C.
-Walk-in freezer measured below -18C.
-Hot-holding measured above 60C.
-3 compartment sink equipped with drain plugs.
-Handwashing sink in front area, back area, and womens washroom supplied with hot/cold running water, liquid soap and single-use paper towel.
-Coolers and freezer have accurate thermometer. Probe thermometer available.
-Food is thawed inside walk-in cooler.
-Meatballs are reheated inside microwave to 74C before hot holding it at 60C.
-all food inside cooler is covered and dated. First in first out practice is used.
-Temperature log is available and up-to-date.
-Chemicals are stored in a cabinet separate from food.
-No pest activity noted at time of inspection.
-Back door is closed at time of inspection.
-Mop sink is clean and dry.
-Adequate storage space available for clean equipment and utensils.
-All lights are covered with shatterproof light covers.
-All surfaces are smooth, non-absorbent and easy to clean.
-Facility has adequate lighting.
