All fridges are maintaining foods at 4 degrees C. or colder.
All freezers are -18 degrees C. or colder.
Gravy and meats in warmers are all 60 degrees C. or hotter.
Time temperature monitoring of room temperature held foods was occurring at time of inspection.
Dishwasher final rinse reached 72 degrees C at the plate surface.
Quat sanitizer in wiping cloth buckets measured 200 PPM residual.
General sanitation is overall good.
Manager required to take foodsafe level 1.
