205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] Observation: Under counter cooler not maintaining food at 4 C. This is a re-occurance from last inspection report. Temperature of unit at 10.5 C. Corrective Action(s): Remove all potentially hazardous foods from unit until serviced by technician. Do not re-stock unit until it can maintain 4 C or less. Re-inspection needed to verify proper controls in place. Violation Score: 15 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: Sanitizer (Quats) at source measured close to 0 ppm. Only at the edge of paper was there any measurable colour change on strips. Let system run and retested. Same results. Sanitizer in spray bottles also measured little to no residual. Corrective Action(s): Immediately move to manual addition of Quats to water for both sinks and spray bottles. Ensure solution reaches at least 200 ppm, but can also fall within the 200 to 400 range. Service main dispenser. Re-inspection needed. Violation Score: 15

Temp logs maintained and indicate proper temperatures noted for unit in question. This does not add up. Review existing thermometers used for temp logs and ensure they are accurate/calibrated. Permit should be visible to the public. Please move to front of premises. Replacement permit is available if required (replacement cost $30).
