Routine inspection
- Hand washing stations are provided with hot/cold running water, liquid soap and paper towels.
Food Temperature Control:
- All coolers are at or below 4C. Chest freezer is at -18C or colder. Accurate Thermometer available to monitor food temperatures.
- Food in Hot holding units measured at or above 60C. Cooked rice in warmer measured at 64C.
-Temperature monitoring is being conducted and kept updated. Temperature monitoring log reviewed.
Manual Dishware washing: Three-compartment sink maintained. Sanitizer in sink measured around 200-400 ppm QUAT. Proper procedure was discussed. Ensure all food contact surfaces are being washed and disinfected after use or on a timely manner. Cutting board for vegetables is to be washed and sanitized.
- QUAT 200ppm available in buckets with wiping cloths. All wiping cloths are to be kept inside the buckets.
General sanitation is satisfactory. No obvious sign of pest activity at this date. Food is kept off the floor. Dry storage practices satisfactory. Food stored in close containers protected from contamination. Staff hygiene is overall good.
- Ice machine maintained clean. Ice scoop stored in sanitary condition. Good work!
