Observation: Glasswasher final rinse concentration tested at 11.5ppm, just below the minimum of 12.5ppm.
Corrective Action(s): Technician called. Ensure technician raises the concentration above the minimum, ideally at 15ppm. Informed staff to use the main dishwasher.

Observation: Both main prep coolers observed to have been cleaned however food debris still present on the runners.
Underside of shelving above both grills still requires additional cleaning due to grease build up.
Spilled food product still needs to be cleaned in dry food storage area.
Corrective Action(s): Clean all runners in both coolers as discussed

Observation: Meat slicer observed with food debris affixed. Slicer was last used on Saturday.
Both prep coolers observed with substantial food debris build up on the runners and all surfaces inside.
Correction: Ensure staff are trained on how to properly clean and sanitize the meat slicer. Use a flashlight to observe your work.
Thoroughly clean and sanitize the both prep coolers. Once a week cleaning does not appear to be sufficient.

Observation: Wiping cloths observed on food prep surfaces when not in use.
Correction: Wiping cloths must be placed and kept in sanitizer until needed then returned to the sanitizer container.

Observation: Glasswasher iodine concentration observed to be too low at 8 to 9 ppm. Must be a minimum of 12.5ppm
Correction: Glasswasher is closed. Ensure technician sets concentration at approx. at 15ppm. Resanitize all glassware in the bar once the glasswasher has been repaired.
Comments

Dust buildup removed from ceiling return vent and upper wall surfaces.
Staff writing in actual iodine concentration in daily log.
*Recommend purchasing a "Titration kit for testing the Iodine concentration in the glasswasher as test strips are not as accurate.
