Corrections Noted: √ Cooling continues to be done in cold water baths in prep sink. Most recently made soup in cooler was 3.5C in walk in cooler √ Ice scoop stored in clean container above ice machine √ Inserts in top of line cooler in waitressing area are directly set in cooler (ie not doubled up/nested) √ FoodSafe certificate for Chef on site Note: Reports of local flooding around premise over the weekend were received. Spoke to Executive Chef who stated there was flooding mainly in the parking lot and only a minimal amount of water made it into the office but no where else in the building. Restaurant voluntarily closed during this time but power remained and no food storage or preparation areas were affected in any way.
