Dishwasher at 75 C at plate. cooling units less than 4 C. Gelato display at -10 C Freezers below -18 C. handwash stations good. sanitizer (quats) at main feed measured 200 ppm - sani-buckets available. Make sure to refill to useful level every 2 hours depending on need. No issues noted.
