209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
Thawing cartons of cream and other dairy products are expired, as per the dates on the cartons. However, the cartons are frozen immediately upon receiving so the expiry dates are not accurate. It is difficult for staff to know when the cartons should be used.
Corrective Action(s):
Immediately start writing the date on the carton, which they are removed from the freezer. This way, staff know when to discard the carton after 4-7 days of the written date. During the inspection, staff developed a date recording system.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION):
The Quats sanitizer in the spray bottle had 0ppm strength. The Quats dispensing unit is broken as it is not mixing the sanitizer at the correct strength, and the sanitizer solution is NOT killing pathogens.
Corrective Action(s):
Immediately stop using the Quats dispenser and start using a bleach and water solution in the spray bottles. Call a repair company to fix the Quats dispenser so mixes the sanitizer to 200ppm strength.

Observation (CORRECTED DURING INSPECTION):
Staff wear disposable gloves at all times, however they are not being used correctly. Staff are not changing the gloves when changing a task.
Corrective Action(s):
Owner to review with staff, the correct use of disposable gloves. Hands must be washed with soap and water before putting on a pair of gloves. Gloves must be changed each time a new task is done; after handling cash; and prior to handling food and drinks.

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -5C or colder; thermometers present; and temperatures recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 71C at the plate's surface, as per max/min thermometer.
- Bleach solution in cloth buckets had [Cl2] of 200ppm. Bleach solution in spray bottles had [Cl2] of 200ppm.
- All foods stored in food grade containers; labeled; covered; date coded; stored in groups; and stored 6" off the floor on shelves or racks.
- No expired foods in used or for sale.
- FoodSafe certified staff present.
- General sanitation level is good.
- No signs of pests.
- COVID-19 Plan in place. Social distancing markers on floor; masks worn by staff; plexiglass barriers at ordering area; tables and chairs 6 ft apart; increased sanitizing of high touch areas (every 30 minutes); tables and chairs sanitized after each customer; contact info taken when booking the meeting space; maximum of 6 people allowed in the meeting space; and health screening of staff done prior to each shift.
- Discussed inspection results with the owner, no signature obtained due to the pandemic.
