Observation: Sushi bar cooler registered 7-9 degrees C at the time of inspection. Fish stored on the left side of the sushi bar < 4 C.
Main prep cooler registered 6.9 degrees C. All items from the sushi bar were transferred to the bottom under counter cooler during the inspection.
Corrective Action(s): Repair or adjust both coolers so that they are able to maintain all foods at 4 C or below. Sashimi fish and imitation crab must be stored in small stainless steel pans. Cooler doors must be kept closed when not in use. Do not store imitation crab at room temperature. ( Immediately).
